Barbequed Oysters with Chipotle Lime Butter

4 dozen fresh oysters

Chipotle Lime Butter:

1/2 lb. Unsalted Butter, softened

2 Chipotle Chiles

1 Lime - Juice and Grated Zest

Pinch of Salt

To make Chipotle Lime Butter - cut butter into small pieces and place in food processor.  Remove seeds and veins from

the chiles and coursely chop.  Add chiles to butter along with lime juice, zest and salt.  Pulse until whipped.

Prepare a hot charcoal fire.  Scrub oyster shells under cold running water.  Place Oysters on grate and grill until they

open.  Remove top half of shell and put a small dollop of chipotle butter on each oyster.  Serve hot.
